Italian Cream Cake
1 Stick Butter Room Temp
1/2 C. oil
2 C. sugar
5 egg yolks
2 C self rising flour
1 teaspoon baking soda
1 C. buttermilk
1 teaspoon double strength vanilla
1 C sweetened coconut
1 C chopped pecans
5 egg whites beaten to stiff peak

Combine butter and oil and beat well, add sugar beat well, add yolks and beat well. 
Combine flour and soda. Add to creamed mixture alternating with buttermilk
Add vanilla, coconut, and pecans and mix well.
Fold in egg whites. Pour into three 9 inch cake pans which have been lined with parchment paper.
Bake at 350 for 25-30 minutes. Cool 10 minutes and remove from pan.

Cream Cheese Frosting
2 8oz blocks of cream cheese -room temp
1 stick butter room temp
3 to 4 cups of powdered sugar (up to 2 boxes)
1 teaspoon double strength vanilla 
Additional chopped pecans

Combine cream cheese and butter until blended, add power sugar and vanilla. I freeze the cake for about 30 minutes before frosting because it is so moist it will be difficult to frost without this step. top with remaining pecans after frosting.


4 oz unsweetened chocolate
1 and 1/2 sticks of butter
2 cups sugar
3 eggs
1 teaspoon double strength vanilla
1 c flour
1 teaspoon Vietnamese cinnamon

Melt Chocolate and butter in microwave on high for 90 seconds to 2 minutes, Stir until combined.
Add 2 cups sugar and stir. Add 3 eggs and stir. Add flour and cinnamon and stir 20 to 30 times. Be careful not to over stir.Fits a 9X9 pan or deep dish pie pan. Bake at 350 for 25 to 30 minutes.

Sugar Cookies

2&1/2 c. All purpose flour
2 sticks Butter at Room Temperature
1&1/2 c. Sugar
1 Egg
1/4 tsp. salt
1 tsp vanilla extract

Cream butter and sugar. Add egg, salt and vanilla. Add flour slowly. Divide dough into 4 sections, shape like logs and roll in plastic wrap. Chill one hour. Take out one section at a time to work with rolling onto lightly floured surface until 1/8 inch thick. Cut cookies into desired shapes.

Bake at 375 for 8-10 minutes.

Melt Chocolate Chips or White Chocolate Chips in microwave for 30 seconds intervals until creamy. Dip edge of cookie in melted chocolate and add candies for decorations.
